Garlic sesame noodles (cold or hot)

Method

  1. Cook noodles. Rinse under cold water.
  2. Sauce: whisk soy + sesame oil + peanut butter + vinegar + honey + sriracha.
  3. Heat neutral oil in pan until very hot. Pour over minced garlic in a bowl (the sizzle blooms the garlic). Stir into sauce.
  4. Toss noodles in sauce. Top with green onion + cucumber.
  5. Eat cold from the fridge or quickly reheat.
  6. Protein add-on: leftover chicken sliced over top, or a soft-boiled egg.
  7. Toppings: sesame seeds, cucumber, shredded chicken, sliced soft-boiled egg.
  8. Reheat: microwave 2-3 min, add a small splash of water and cover with a damp paper towel, stir halfway through.
